Wild rice and chicken
Bring broth to a boil, add rice. Summer approx 45 min. Drain and toss with lemon juice. Set aside to cool. Add chicken, onion, red pepper and peas to rice. Mix with dressing and cool 2-4 hours. Just before serving add nuts and avocado. Toss again and garnish with lettuce.
