Each cookie is 3-4 bites of heaven. They puff up in the oven instead of melting down flat. Delicious! During Christmas and New Years I like to make a variety of small cookies. It's nice to sample a variety without consuming massive amounts. These cookies will be my new addition, although I'll probably make these year round. Big hit with my husband and son!
Preheat oven to 375 degrees.
Cream the butter and sugars well with hand mixer.
Add vanilla and egg, mixing well.
Add the flour, salt, and baking soda, blending until fine crumbles form.
Add the chocolate chips and stir into mixture until a uniform dough results.
Using a 1 tabelspoon (measuring spoon) scoop a heaping tablespoon of dough and roll into a ball. Drop onto an ungreased cookie sheet, spacing twelve scoops per cookie sheet (they will puff up and spread out only slightly).
Bake 8-10 minutes, or until light brown and no longer look wet in the center.
Notes from Laura:
For larger cookies use a 1 3/4" ice cream scoop and drop onto cookie sheet.
Do ahead tip: This dough can be made two weeks in advance, formed into balls and frozen. Do not thaw before baking.
