The recipe for macaroni and cheese from the Biergarten Restaurant in Epcot.
Start by making the egg custard:
Pour the cream into a bowl. Gently mix in the eggs, salt, pepper, and nutmeg. Stir to,combine. Reserve in a container for later use.
Assembling the gratin:
In a large bowl, mix the macaroni, 5 ounces of cheddar, and 5 ounces of Swiss together. Reserve the rest of the cheese for topping. Spray a 16x9 casserole dish with cooking release. Place the macaroni mixture evenly into the pan leaving about 1/2 inch space at the top. Slowly pour the custard into the pan to just cover the noodles. It will take about 1 quart of liquid. Cover the pan with parchment and aluminum foil.
Bake at 375° for 30 minutes. Remove the covers from the gratin.
Mix the remaining cheese together and sprinkle it over the pan evenly. This is to be on top of the gratin, so do not mix it in. Bake for another 15 minutes at 375° until set and the cheese is melted. Let rest for 5 minutes and cut individual portions. Serve in the casserole pan with a small spatula.
