This is Sue Hoag's recipe....delicious on it's own or with yogurt or almond milk
Preheat oven to 300 ° F
Combine all dry ingredients.
Add the honey and vanilla to the melted coconut oil and stir until blended. Add this to dry ingredients and stir until evenly coated.
Arrange granola in a thin layer on a parchment lined pan and bake 12-16 mins. stirring half-way through.
Let cool and then put into the container of your choice.
