Preheat oven to 250 degrees, line 2 baking sheets w/ parchment paper
Toss together the shredded coconut, almonds, sunflower seeds, pumpkin seeds and walnuts into large bowl
In a small bowl, stir together coconut oil, stevia, cinnamon and nutmeg until blended
Pour the coconut oil mixture into the nut mixture and use your hands to blend until the nuts are well blended
Transfer the granola to the backing sheets spread out on the sheets
Bake granola, stirring every 10 to 15 minutes until mixture is golden brown
Store in airtight containers (after it is completely cooled), in the refrigerator for up to a month.
