Megan: An oldie I made made last night and thought... I should send this to Mom!
Mom: I tried this after Megan sent it to me. Oooo! So good! For Steve & I, I used only 3 cod loins and 1/2 cup of wine and about 5 oz. of Brie.
1. Preheat oven to 400 degrees
2. Wash the cod, pad dry with paper towel
3. Sprinkle with the lemon juice, salt and flour them
4. Melt butter in a frying pan, fry the fish a few minutes on both sides until golden.
5. Place them in an oven proof dish, top with brie & chopped pine nuts, pour wine over, top with parmesan cheese
6. Bake approx 15 minutes
