Makes 4 loaves
Combine oatmeal and boiling water , mix well and let cool. Place in mixer with salt, butter, molasses or honey, and brown sugar. Mix well. Mix warm water and yeast and allow to proof. Begin adding flour to oat mixture. After adding about 3 cups, mix in proofed yeast mixture, then add remaining flour. Knead in mixer until smooth, about 6-8 minutes. Place in large greased bowl or greased proofing bucket and allow to double - approximately one hour. Divide into four even balls and shape into loaves. Place in greased loaf pans, cover and let rise about one hour. Bake at 375 for 30-35 minutes.
Notes for many years of making this bread...
-I get best result using King Arthur Bread Flour and King Arthur Whole Wheat Flour.
-I use SAF instant yeast, but still proof it.
-I have a 6 qt. Kitchen Aid mixer and it will handle this amount of flour and oats, the smaller 5 qt. model may not. If that is what you will be using, you may cut the recipe In half or mix in 8 cups of flour and hand knead the last 2 cups in.
