boil water, pour over oatmeal, let set while you put everything else into processor.
next 11 things into food processor. mix well
Add soaked oatmeal, mix again.
put into 9x13 baking pan w/parchment paper underneath
spread until approx even.
bake in 350 oven for 25 minutes.
While it is baking, mix other ingredients for topping.
melt coconut oil, mix in all other ingredients by hand (i.e. food processor will chop too small while mixing)
it should be fairly stiff mix
when cake is ready, gently spread topping over all including down to sides, corners. Top of cake is fragile so be careful. Turn on broiler and broil about 5 minutes until you smell toasted coconut/nuts. Do not leave! it happens fast and burned coconut is not tasty.
Pull out of oven, put in freezer in pan for 30 minutes. After that you can pull out of pan with parchment paper and cut up. Good warm or cold.
I made the first time with 1 cup raw almonds in the cake batter and 1/2 cup slivered almonds and 1/2 cup raw cashews in topping. Delicious. I'm sure it will be much improved with actual pecans.
