The Liechty family cookie recipe.

Directions:
Preheat oven to 350 degrees.
In a large bowl, cream together the butter and sugar until smooth. (Use the hand mixer or stand mixer because it will be a pain by hand)Then add eggs and extract(s) and mix 'till smooth. In a separate bowl thoroughly mix together the dry ingredients (flour, spices, soda/powder, salt). Sifting flour before-hand helps also. Add the dry ingredients slowly to the creamed mixture and mix on low speed until everything is incorporated. Then add the oats slowly and then the chocolate and nuts or whatever else you want to add. Then ball up cookies on baking sheets that are either coated with butter or with parchment paper. About 1 1/2 tablespoons of cookie dough should give a good sized cookie. Place the balls about 2 inches away from other balls of dough so they don't cook together. Then bake, about 8-10 minutes but check often (using the oven light - don't open the oven!!) You'll have to judge for yourself when they are done. A good rule is to take them out just past visible gooeyness because they will firm up as they cool and you don't want them over cooked. Take the cookies out and let them sit on the sheets for 1 minute before removing them onto towels to dry.
Chocolate Chip and Pecan proportions to taste. Should eyeball mixture before baking and ensure that each cookie will have some of each.
