Soft & yummy
Cream together butter and sugars until light tan and fluffy. Add eggs and vanilla until well combined.
Combine all dry ingredients exceptt oats, add to creamed mixture. Add oats (raisins & nuts if using), mix well, cover and chill in refrigerator for at least an hour.
Preheat oven to 375 degrees. Roll dough int walnut size balls, place on cookie sheet 2 inches apart and flatten with your hand or a fork. Bake 8-12 minutes. Allow cookies to cool for 5 minutes and then transfer to a wire rack until completely cooled. Store in an airtight containter.
