Helen loves these with just cranberries and pecans.
Beat butter and sugars until light and fluffy. Add egg and vanilla and beat until completely incorporated.
Add flour, oats, baking soda, cinnamon, and salt and beat until just combined. Stir in white chips, cranberries, and nuts.
REFRIGERATE DOUGH FOR AT LEAST 30 MINUTES.
Preheat oven to 350*. Scoop rounded tablespoons of dough and roll into balls. Arrange on a cookie sheet 2" apart. Flatten balls to about 1/2". Bake for 11 minutes or until golden brown on the bottom. Remove from oven and cool on cookie sheet for 5 minutes then transfer to a wire rack to cool completely.
