Lentil puree: Wash dried lentils, cover with water and simmer until tender (30 minutes). Drain and puree. Add water if needed to achieve pumpkin filling like consistency.
Preheat oven to 375 degrees F.
Combine margarine, sugar, and puree. Then add vanilla and eggs. Stir in dry ingredients. Mix in chips or fruit. Drop onto non stick pan. Bake for 10-12 minutes.
