Makes a quick breakfast or a healthy snack
Preheat oven to 375 degrees. Line six muffins cups with papers. It is much easier to remove muffins from pan with liners! It is very messy otherwise, partially baked but also granola like.
In a large bowl, mix together oats, raisins, nuts, cinnamon and salt.
In a medium bowl, whisk together the lentils, applesauce, butter and maple syrup. Add the milk.
Stir wet ingredients into the dry mixture and mix thoroughly.
Use an ice cream scoop to evenly fill muffin cups to the top.
Bake for 23 minutes until slightly risen and dry on top.
Remove to a rack and let cool slightly. Serve warm with maple syrup and fresh fruit of your choice.
I used strawberries and blue berries which complemented the muffins well. This is good with a dollop of yogurt on the side.
