Combine oats and buttermilk. Let stand 1 hour. Add sugar, oil and egg to oat mixture. Mix well. Combine flour, baking powder, soda and salt in large bowl. make a well in center of mixture. Add oat mixture to dry ingredients, stirring just until moistened. Spoon into greased muffin pans, filling two thirds full. Bake at 400 20-25 minutes.
