Chewy and Delicious
Preheat oven to 350 degrees.
In a mixing bowl or stand mixer with the paddle attachment , cream butter and sugars till light and fluffy. Slow speed and add eggs one at a time, then add the vanilla.
Sift together flour, baking powder, cinnamon and salt and with mixer on low add to the butter mixture. Add the oats, craisins, raisins and pecans and mix till just combined.
Using an ice cream scoop, scoop onto the cookie sheet and lightly press down to flatten top and cook for 12 - 15 minutes or until lightly golden. Let stand on cookie sheet for 5 minutes before removing. If the bottoms seem to cook quicker then the top, lower your oven to 325.
