THIS IS A DOUBLE RECIPE AND WILL MAKE 8 DOZEN COOKIES
PREHEAT OVEN TO 375 DEGREES
In a large bowl, cream together the butter, both sugars, vanilla and eggs.
In another bowl, combine the flour, baking soda, salt, and cinnamon.
Add the dry ingredients to the wet and mix well. Add the oats and mix well. Stir in the butterscotch morsels. Cover and refrigerate for at least 45 minutes. If you let it chill for longer it will get hard and will need to sit out for about 30 minutes before forming cookies.
Spoon dough onto ungreased cookie sheets and bake at 375 degrees for 12-14 minutes, until light brown on the sides.
