This is a recipe my mother used for pecan pie when we were young and she couldn't afford pecans. I think it may have come from the depression era because, it tastes like pecan pie without the pecans.
Pre-heat oven to 350 degrees.
In a medium-sized mixing bowl, beat the eggs until frothy. In a small mixing bowl, combine sugar, flour, cinnamon, and salt. Add spices to egg; mix well. Add the corn syrup, butter, and vanilla, stir. Add the quick oats and mix well.
Pour mixture into 9" deep-dish pie crust. Place crust protector over edge of crust. Place pie on a cookie sheet and place in the oven. Bake for 35 - 40 minutes or until the center is set and doesn't move when jiggled. Cool on a wire rack and store in the refrigerator.
