Pressure cooker minestrone
In a pressure cooker heat oil over medium high heat. Add onion, garlic, celery, carrots and herbs; cook stirring frequently until onions softened.
Add barley, potatoes, vegetable stock and tomato paste.
Close and lock lid. When cooker reaches high pressure cook for 10 minutes.
When done open using quick release method.
Add kidney beans and pasta; cook uncovered for 10-12 minutes. Season with salt and pepper.
Serve hot with shredded cheddar cheese on the side.
