Mix all ingredients except vanilla in saucepan. Bring to a boil; reduce heat. Cover and cook over very low heat, stirring occasionally, until rice is tender and milk is almost absorbed, about 50 minutes. Remove from heat. Stir in vanilla. Serve warm. Serves: 12 (1/2 cup each)—
