Great over grits with any type of fried seafood
Fry bacon in skillet over medium heat until golden brown. Pour off all but 3 tablespoons of the fat
Stir in the flour and cook until it turns brown. Remove the pan from the heat and stir in the chopped tomatoes with the juices. Return the pan to medium heat and bring the mixture to a boil, stirring constantly. Simmer sauce until thick and well flavored, about 3 minutes. Add salt and pepper.
