A chocolate cake cookie sandwich, with what I like to call that nasty shortening cream filling of AWESOMENESS!
The cream filling ingredients are listed in the directions. I usually start the cream filling first, as by the time the cookies are done baking, the flour mixture is then cool enough to add the rest of the filling ingredients.
Preheat oven to 350
Cream Filling:
Start the cream filling first. add 2 1/2 TBSP Flour and 1/2 cup of milk in a sauce pan and cook on stove top until thick. (about as thick as paste)
remove from heat and set aside until thoroughly cool. meanwhile, In a separate bowl, cream together 1/2 cup Sugar, 1/2 cup Shortening, and 1 teaspoon Vanilla. (optional add 1 TBSP Marshmallow Cream), set aside. This mixture will be added to the completely cooled flour mixture.
Cocoa Cookies:
cream together the Sugar, Shortening, Eggs and Sour milk. (if you don't have sour milk, add 1 tsp cider vinegar to milk to turn it sour)
then add flour, baking powder, baking soda, cocoa and WARM water. beat with hand mixture until mixed thoroughly.
drop cocoa mixture onto cookie sheets a little bigger in size than that of a walnut. (you will use 3 cookie sheets, 12 on each for a total of 36 cookies) bake for 10 - 12 minutes.
Cookies are done when the top springs back when lightly touched. Take them out of the oven and let cool. Fill with finished cream filling mixture.
