A relatively dry recipe (light olive oil and seasoning) that is very quick and simple to make yet very tasty. Ideal for fast Summer lunches, light snack, and even potluck!
Fill large pot with water and bring to boil. Add pasta and cook 8-10 minutes until al dente. Drain.
Tip: rinse pasta in cold water after draining.
In a large skillet over medium heat, add olive oil. Sauté garlic and onions for 2 minutes. Stir in olives and sundried tomatoes and cook until heated through.
Add cooked pasta and season with oregano, salt and pepper. Toss to coat. Add spinach and prosciutto, continue mixing over medium heat for 2 minutes or until the spinach becomes soft.
Top with feta cheese and serve.
