Blend cheese and butter.
Mix together flour, salt and paprika.
Combine cheese and flour mixtures. Add sherry.
Using 1 to 2 tsp dough per olive, make a ball then flatten.
Wrap around olives and place on ungreased cookie sheet.
Bake at 400 for 12 to 15 minutes.
Can be made ahead and refrigerated.
