Combine sour cream, Italian seasoning, red pepper flakes, and four cheeses into a large bowl and blend thoroughly. Pour into a sprayed casserole or deep pie dish. Place on center rack in oven and bake 10-15 minutes until the mixture is melted and bubbly. If you like the top browned, broil for an additional 2-3 minutes but don't let it burn. Garnish with diced tomatoes and parsley in center of dish.
Toast the bread slices for 5 minutes, then serve with fonduta immediately.
