This is a hardy breakfast that can be adjusted for each person. One of my favorite breakfast items.
Directions are for individual omelet. Just repeat for how many servings needed.
In a small mixing bowl, scramble three eggs. Salt and pepper as needed.
Coat a small non-stick skillet with cooking spray and place on the burner over medium-high heat. Pour in the eggs; cover and let it cook until egg looks set. Flip the egg. On one half of the egg, place a 1/4 of each of the remaining ingredients. Fold over the other half of the egg and press lightly with a spatula. When the cheese has melted, remove from pan. Serve hot with salsa if desired.
