1. Crack the eggs into a bowl and beat with a fork until smooth. Season the eggs with salt and pepper and stir in any herbs you would like to use.
2. Heat a non stick pan and add the oil. When the oil is hot, add the chosen ingredients to the pan (however, if you're having tomatoes only add them at the last minute)
3. Add the egg mixture. Using a spatula and working in a circular motion, move the eggs in the pan around, while at the same time tilting the pan back and forth across he heat. Cook until golden brown underneath, but slightly soft and clear on the top. Fold the omelette over and cook for another minute. Serve immediately.
