Mix ground pork with 3S3P, chill until ready to mix.
Heat olive oil, add onions and sweat in pan with a pinch of salt.
Add 2/3 of the chopped garlic and cook over low heat for 5 minutes. Add oregano and thyme and continue cooking until almost caramelized. Add smoked paprika, chipotle, chili powder, and 2/3 of cumin and stir well. Deglaze with vinegar and cook down.
Cool, then blend in vitamix until smooth. Add to pork and mix well.
Toast chilies and cinnamon, then grind into powder. Add to mixture along with remaining cumin and chopped garlic and Hungarian Paprika. Mix well.
Cook a small patty and adjust seasoning as needed.
