-Preheat oven to 375 d Fahrenheit
-add 1/2 tsp salt, 1/tsp pepper, 1.4 tsp cumin, to 12 eggs, whisked.
- Heat skillet pan with 1 table spoon butter
- Once the skillet is hot and the butter is melted, add diced pepper, onion.
- Stir occasionally, cook until onion turns light brown (~10 mins)
-Add sliced sausage, cook an additional 5 mins (until sausage browned)
-Take skillet off of the heat.
-Add shredded potatoes to lightly greased muffin tins: there should be just enough to cover the bottom of each spot
-Cook at 375 until light brown (~8 mins)
-Pour egg mixture onto potatoes; fill muffin cups ~2/3 full with egg
-Add ~ 1 and 1/2 table spoon of the green peppers/onion/sausage mix to each cup
- Sprinkle ~ 1 tsp cheese onto each cup
-Cook 10 mins, until eggs are light brown on top.
-Yields 24 "egg muffins"
-Once the eggs have cooled completely, bag two "egg muffins" per ziplock (snack size works well!), place in the freezer.
- To eat, place 2 "egg muffins" on a plate in the microwave, heat for 1:45 mins
If your pan is dark, decrease temp 25 degrees, and check at 8 mins to see if done (lightly browned, not egg not "jiggly" when you lightly shake the pan )
