Made with veggies, eggs, meat and cheese. Sounds good.
Preheat oven to 350 degrees. In a non stick, ovenproof pan with rounded sides, saute the sausage. When done set aside. Using some of the fat, from sausage, saute the veggies until slightly tender. Return the sausage to the pan. Beat the eggs and add in the cheese.
Pour egg mixture over the veggies and sausage.
Cook over med. Heat for 5 min., running a spatula around the edge. Place the pan on the oven and cook until eggs are set ( about 10 min.) OR so.
Cut into wedges. Eat and enjoy.
This recipe makes great leftovers.
