Easy moist cake that would also serve well as a coffe cake
Whisk the 2 eggs, oil, sugar and cinnamon together in a large bowl. Stir the sliced apples into the wet mixture. To avoid apples turning brown you should peel slice and stir into mixture one at a time. Mix the flour and baking soda together in a small bowl.
Stir the flour and soda into the apple mix using a fork until all the flour is moistened.
Pour mixture into a greased 9x13 or 2 greased 9 inch cake pans.
Bake at 350 for 45-55 minutes.
