Suggest a better descriptionSeason chicken with salt, pepper, paprika, chili, oregano and fry for a couple of mins each side
Remove the chicken to a plate and add the onion, carrot and garlic to the pan with a knob of butter. Cook until soft
Add mushrooms and cook for a couple mins
Deglaze the pan with wine
Cover the contents with chicken stock
Add the tomatoes, squeeze of lemon and parmesan
Season with salt and pepper
Put the chicken on top
Transfer uncovered to a pre-heated oven at 200 degrees for 15 mins
Remove from oven and transfer chicken to a plate to cut into smaller pieces
Add the spinach to the pan and stir through
Plate up the rice mixture, topped with chicken and grate over lemon zest and parmesan
Serve with a slice of lemon
