1. Dice carrots. Finely chop onion. Thinly slice garlic.
2. Heat drizzle of oil in pot at medium-high heat. Add sausage and brown for 4-6 minutes.
3. Add large drizzle of olive oil to pot. Stir in carrot, kale, and onion. Add big pinch of salt. Stir occasionally until veggies softened and sausage cooked through for 5-7 minutes.
4. Add garlic and Italian seasoning (all for 4 servings) and stir for 1 minute. Stir in 6 cups of chicken stock (for 4 servings). Add couscous then cover pot and bring to boil. Then reduce heat to low for 7-9 minutes.
5. Stir half the parmesan into soup until melted. Season with salt and pepper.
