Creamy comfort food with rice and peas.
1. Melt 3 tbsp butter in saucepan; blend in flour and thyme and cook for one minute. Do not brown.
2. Gradually alternate stirring in broth and milk, cooking and stirring until thickened and smooth.
3. Stir in chicken, salt, and pepper.
4. Grease a 1.5 quart shallow baking dish.
5. Spread rice in prepared pan; top with peas and pour creamed chicken over all. Do not stir.
6. Dot with remaining butter and sprinkle with crumbs and cheese.
7. Bake at 400 until hot and bubbly, about 20 minutes.
