1. Fry your onion in oil until soft and translucent, put to one side.
2. Using a fork mix your eggs with salt and pepper.
3. Reuse your onion pan and add more oil if needed, add the egg mix and cook, when the omelette begins to firm up but still has a bit of raw egg on the top add your onion mix.
4. Using a spatula, gently bring the omelette away from the edges of the pan and fold over, once the omelette has started to turn golden brown on the bottom, take out of the pan and onto a warmed plate.
5. Serve on a plate with Salad as you will the onion tart.
