1. Using a fork mix the eggs and milk with salt and pepper.
2. Heat a small frying pan with oil, add the egg mix and cook, when the omelette begins to firm up but still has a bit of raw egg on the top add your onion mix.
3. Using a spatula, gently bring the omelette away from the edges of the pan and fold over, once the omelette has started to turn golden brown on the bottom, take out of the pan and onto a warmed plate.
4. Serve on a plate with Salad as you will the onion tart.
