quick and easy onion tarts, great with steaks!
Bake puff pastry according to directions on box.
Slice the onions very thinly. 2 onions for every 6 pastries.
Cook onions in olive oil; salt and pepper while cooking.
As onions begin to caramelize, add balsamic vinegar. Cook for another 5 minutes. Add stock. Cook for another five minutes.
Add onion mixture to puff pastry. Sprinkle with Parmesan cheese. Bake for an additional 5 to 10 minutes.
