Lentils are very versatile and can be served with so many things for a punch of flavor (e.g., as a side dish with entrees of beef, pork, poultry, fish or even eggs). They can be eaten with rice or on their own as a hearty soup or stew. Add additional protein, veggies and seasoning that work for you. Try adding carrots or red bell peppers for more color and texture. Try some bits of ham or sausage for a more smoky, hearty flavor.
1. Sort, rinse and drain lentils.
2. Either soak 1 pound of lentils overnight in about 7 cups of water OR boil 1 pound of lentils in 7 cups of water for 5 minutes. Then, set aside while prepping vegetables and seasonings.
3. In a deep saucepan (over medium-high heat), sauté garlic and onions in olive oil (briefly, 1 minute) until you smell the aromas.
4. Add celery and jalapeños to onions and garlic. Quickly sauté (over medium heat) and avoid burning garlic.
5. Drain half the water from the soaked/prepared lentils.
6. Add chicken broth and seasonings (thyme, pepper, turmeric, sazon goya and red pepper flakes). Save salt until near the end.
7. Cook on medium to medium-low heat for approximately 40 minutes.
8. Add sale and continue cooking until tender.
9. Add chopped cilantro after approximately 50 minutes.
10. Taste test and add additional spices, if needed.
