Great Lean & Green Optavia Meal
Preheat oven to 400 degrees.
Sautee cauliflower in a pan over a medium heat. Cook until no longer moist, but before it starts to turn brown. Let cool.
Mix cauliflower, 1/3 cup mozzarella, 2 T Parmesan, 2 T Egg Substitute and seasonings in a bowl.
Line a baking sheet with parchment paper.
Form the cauliflower mixture into a circle or rectangle, making it about 1/4" thick.
Bake until the edges are browned, about 20 minutes. Turn it over after about 12-13 minutes, if able.
Top with tomato sauce, 1/3 cup mozzarella and pepperoni or sausage.
Bake until cheese is melted, about 7-10 minutes.
