Suggest a better descriptionHeat a wok or skillet over high heat. add the oil and heat for 30 seconds. Add the shredded carrots and sliced leeks and stir-fry for 2-3 minutes, or until the vegetables are just soft.
Add the orange segments to the wok and heat through.
Mix together the ketchup, sugar and soy sauce in a small bowl. Add the mixture to the wok and stir-fry for 2 minutes.
Transfer the stir-fry to four warm serving bowls and sprinkle with the chopped peanuts. Serve immediately.
