1. Turn on oven to 450 degrees and position rack to middle.
Crust
2. First 3 ingredients - grind graham crackers and sugar in processor till mixture is fine. Then add butter until crumbs are moist.
3. Press crust into bottom and sides of greased 9 inch springform pan.
4. Bake for 5-8 minutes. Transfer to rack for cooling. Maintain oven temperature.
Filling
Note: For fluffy cheesecake, make sure cream cheese and eggs are at room temperature.
5. Using electric mixer, beat cream cheese and sugar into a large bowl until extremely smooth.
6. Add eggs, liquor, Orange peel, and vanilla. Beat until blended.
7. Pour filling onto crust-lined pan.
Baking
Note: Do not open oven while baking.
8. Bake cheesecake for 15 minutes at 450 degrees.
9. After 15 minutes is up, reduce temperature to 300 degrees and bake the cheesecake for 55 minutes longer.
10. Upon finishing cooking, let cheesecake set for about 30 minutes.
11. Then open oven door and let cheesecake sit for 1-2 hours. Finish cooking at room temperature before putting into fridge. Let it sit in fridge over night.
Sauce
12. Stir sugar and water in saucepan on medium-low heat.
13. Once sugar has dissolved, boil without stirring until syrup has turned to amber.
14. Gradually add cream on low heat while stirring until mixture is smooth.
15. Remove from heat and whisk in liquor.
