This is a recipe for a chipotle sauce that is used to marinate chicken and then used in the baking of the chicken. There is a chipotle sour cream sauce to dip the chicken in when eating it. That recipe is listed as "Chipotle Sour Cream" in the sauce recipes.
1. Preheat oven to 450 degrees F
2. In the bowl of a food processor, combine the hot water, chipotles, cilantro, tomato paste, marmalade, garlic, spices, vinegar, lime juice, and peanut butter, and pulse to combine the ingredients into a coarse paste.
3. Divide mixture in half.
4. Pat chicken dry. Remove wing tips if using wings. and cut the wings into 2 pieces, dividing at joint. (Tips can be used for chicken stock)
5. Marinate the chicken in half of the chipotle mixture for 6 to 8 hours or overnight. The olive oil may be added to this mixture to help coat the chicken.
6. Spray a heavy duty baking tray with vegetable cooking spray.
7. Arrange the chicken on the tray in one layer with space between each piece.
8. Spray the chicken with a light layer of vegetable cooking spray.
9. Bake in the oven for 20 to 30 minutes until pieces are golden brown and crisp. If needed, brown under the broiler for 3 to 4 minutes.
10. Add the 2 tablespoons of the honey to the remaining chipotle sauce.
11. Place 2 tablespoons of the sauce in a large mixing bowl.
12. Add the chicken pieces and stir gently to coat every piece in sauce. Add more sauce to taste or serve extra sauce on the side.
13.Place the chicken on a platter and garnish with sliced scallions..
14. Serve a bowl of Chipotle Sour Cream sauce (see recipe for this under sauces)
