A yummy snack bread
Preheat oven to 375F. Coat loaf pan (9x4 inches) with nonstick spray. With electric mixer on medium, beat egg whites, egg, oil, juice, buttermilk, brown sugar, and vanilla. Sift the sugar, flour, salt and baking powder into another bowl. Stir until mixed.
Blend the wet ingredients into the dry. Stir in cranberries and orange zest.
Spread batter into loaf pan and bake for 60 minutes or until a toothpick comes out clean when inserted into the center. Cool in pan for 10 mintues before turning on to a wire rack.
Makes 1 loaf, 12 slices
