Suggest a better description1. Make caramel. Heat sugar with water over medium high heat until deep caramel forms. Remove from heat. Pour 2 tablespoons caramel into each of 10 ramekins and swirl to coat bottom. Set aside.
2. Beat yolks with sugar and vanilla. Place remaining ingredients in a saucepan and cook over medium heat until scalded. Temper eggs with some of the cream and then whisk mixtures together.
3. Fill ramekins and place in a 275F wet Alto-Shaam. Bake until set, approx. 1 hour. Chill.
