Very old recipe for easy and delicious Christmas cookies passed to me by my grandmother.
1. Preheat oven to 350 degrees. Prepare cookie sheets.
2. Using a food processor, grind 1-1/2 whole oranges. Rind should be in very small pieces. Grind the remaining 1/2 orange separately and reserve for icing.
3. In an electric mixer, add sugar, Crisco and salt and mix on low speed until blended.
4. Add eggs, and the ground-up 1-1/2 oranges to the dry mix and blend on low speed.
5. In a medium mixing bowl, sift flour with baking powder.
6. In a small mixing bowl, combine the buttermilk and soda. Add buttermilk alternately with flour to the sugar/egg/orange mixture in the electric mixer. Mix until well blended.
7. Drop by tablespoon on cookie sheet (about 2" diameter drops), and bake 350 degrees for 15 minutes, or until done. (Press middle of cookie with finger. It should be firm, and no longer doughy.)
8. Remove cookies to racks and cool completely.
9. Icing:
Gradually add the reserved ground-up orange to the powdered sugar to a good spreading consistency, and spread on top of cooled cookies. When icing hardens, store cookies in an airtight container.
If more cookies are desired, make in a separate batch. Ingredients are too heavy to mix when recipe is doubled.
