Preheat oven to 350 F and spray a foil-lined baking sheet with nonstick cooking spray. Cut chicken into 1-inch strips. Melt butter in microwave.
In a medium bowl, whisk together butter, honey, orange extract, salt, and pepper. Add chicken pieces, stir to coat, and place in a single layer on baking sheet. Bake 15-20 minutes or until no longer pink inside.
