Agar-agar can be used in place of gelatine for a vegetarian jelly.
1 Place the agar-agar flakes in a saucepan with the water and leave to soak for 15 minutes.
2 Bring to the boil, then simmer for a few mintues until the flakes dissolve. Stir in the fresh orange juice. Pour into a jelly mould and leave to cool, then chill until set.
