What do YOU do with Easter leftovers?
saute asparagus in olive oil until soft but not mushy
spread goat cheese on 1 slice of bread
add ham, asparagus, munster cheese and egg slices
top with 2nd slice of bread
grill sandwich on both sides in remaining olive oil until cheese melts and bread is slightly browned.
I know it sounds wierd, but my wife thinks I should market this sandwich, its that good.
The slightly sweet asparagus offsets the salty ham, and the whole thing is balanced by the pungent goat cheese and hefty rye bread. Bound to raise eyebrows, but surprisingly good. Not a "wonder bread" sandwich. Very flavorful.
