- bring 1/2 cup of apple juice to simmer over medium-high heat
- add apple slices to skillet and cook for 5 to 6 min
- add more juice if needed so pan doesn't dry out
- stir in remaining apple juice, maple syrup, lemon juice, vanilla, cinnamon, and nutmeg
- return to a simmer, then lower heat to medium
- continue cooking until apples are tender and sauce has thickened
- to serve:
- divide yogurt into 4 bowls and top with warm apples and any juice from pan
