There are two types of rice vinegar. Chinese rice vinegar has a sharp, tangy flavor, and Japanese rice vinegar has a smooth, mellow, almost sweet taste. Either vinegar tastes great in this salad.
In medium bowl, combine all salad ingredients except spinach. In jar with tight-fitting lid, combine all dressing ingredients; shake well. Pour half of dressing over salad mixture; toss gently to mix. Serve on spinach lined plates. Pass remaining dressing.
