Put all the ingredients into a large bowl and mix thoroughly. Using wet hands, divide mixture into 8 small burgers. Place on a plate and refrigerate until ready to cook.
Put the carrot, beansprouts and snap peas in a bowl, then add the spring onions and coriander. Whisk together the dressing ingridients.
Spray the burders twice on each side with oil. Fry stovetop or BBQ.
